Stainless thread galling is an odd phenomena, its almost always due to poor threads, either out of the box or damaged when it is run in. If I run the nuts on by hand I can usually feel it and catch it before the thread locks, Never Seize normally keeps the threads from locking even is the threads are galled but if I feel that somethings not right I chuck the fastener.Comment

Thread galling can be due to many things, including, for example, such obscure things as the tightening speed. Or, knowing that cut threads can often gall easier than rolled threads. the sharper edges heat up faster and then "cold weld" easier. Lots of other reasons.
