    how much square footage required?

Is there any formula or method for determining the amount of roof space needed for solar heating certainly taking into account the size of the pool?

depending on where you are and the season you desire will determine that.
Here in Maryland for a pool in full sun and a swim season beginning of may to end of september 50% of the surface area of the pool.if completely shaded then 100% of pool surface area.
A bit more to it than that but generally the idea.

I live in So Cal and I got quotes for different sized systems ranging from 70-95% of the pool surface area. I think 70-80% is the standard where I live. One vendor was suggesting maxing out the system at 95% since the incremental cost was not that much at $1200 (I think that is a lot!) and the fact that the panels would be placed on a NE facing roof which is not ideal.

At the risk of being a PITA, I'd suggest considering that a pool cover is a lot more cost effective than a solar pool heater. The water will stay warmer and any solar or other pool heating equipment will be smaller and less expensive. The covers themselves however, come with their own problems - mostly having to do with appearance, handling and storage when not on the pool. Some folks also cite safety and insurance concerns.
