how many anker solix e10 battery packs do I actually need

Trying to figure out sizing before I order. 2200 sqft in North Carolina, 3 ton central AC, no solar yet but planning to add panels this fall. Main goal is TOU shifting on duke energy where peak is 27c and off peak is 11c, that spread is too good to ignore. I want the battery dialed in first so when solar goes up I can store daytime production instead of just sending it back to the grid for pennies.

I keep going back and forth between 2 and 3 packs. My peak window is 4-9pm and I'm probably pulling 15-20kwh during those hours between the AC, cooking, and everything else running in the evening. 2 packs is 12kwh which seems tight, but 3 packs at 18kwh might be overkill if solar is going to be feeding the battery during the day anyway. What are you guys running and how does the math actually play out once solar is in the picture?
