Hopefully you understand the difference between series and parallel. First you connect 2 panels in series, then connect the other 2 in series. Now you connect the 2 pairs in parallel, That's what 2S2P is.

i have two 3 branch 10 gauge connectors and a bunch of extra cable and a box full of the mc4 connectors with the crimping tool. Should I just hand wire it all with crimp connectors or use the pre made branch connectors?
Can I use the 3 branch connectors and leave one empty?

The controller you have will charge 12 or 24 volt batteries. Some do 12, 24, 36, 48, 60 and 72 volt banks. The MPPT part allows you to use higher voltage input and it will step down the voltage for your battery banks needs. Without going into a full on explanation why this is better lets just say it has the ability to harvest more of your panels output and can save money on wiring, fuses and allows you to use inexpensive grid tie type panels instead of expensive 12 volt battery type panels.
I need to suggest you read all the stickies at the beginning of the off grid section. study and absorb as much as you can. It will save a lot of Q&A time.
