    How low should I allow my battery voltage to fall? When the bank gets to 12.0 V I begin to worry if I am killing my batteries. What is a safe level?

    Way to low. 12 volts is right around 40% SOC and you never want to go below 50% or 12.1 volts. Ideally you only want to use 20 to 30% maximum per day to maximize battery life or roughly never let them go below 12.45 volts. Additionally never ever let your batteries sit in a discharged state. Charge as soon as possible. Never ever let them sit.
